Caramel Cheddar Popcorn Balls

If you’ve ever snacked on Chicago mix popcorn, you know how addictive caramel and cheddar are together! These irresistible popcorn balls strike the same perfect balance of sweet-salty-crunchy.

  1. Sprinkle the popcorn with the sea salt, and set it aside in a large bowl. Sprinkle the cheddar over the popcorn. Line a baking sheet with parchment.
  2. Combine the remaining ingredients (brown sugar through butter) in a small saucepan. Bring to a simmer over medium heat, stirring constantly. Simmer and stir constantly for 5 minutes. Remove from the heat, and pour over the popcorn and cheddar. Stir gently to combine. Form 3-inch balls, setting them on the parchment-lined pan to cool completely.
