Macaroni soup with ham or Spam is a popular breakfast menu item at Hong Kong diners called cha chaan tengs. My mom would always make her own chicken broth whenever she decided to make the soup, and it is totally worth it. But if you’re looking to have dinner in less than 15 minutes, canned chicken stock is fine.
- Cook the macaroni according to the instructions on the box. Drain and set aside.
- In another pot, bring the chicken broth to a simmer.
- Heat up the oil in a pan. Fry the egg, then brown the slices of Spam on each side.
- Add the cooked macaroni to a bowl. Add enough broth to barely cover the macaroni. Place the fried egg and Spam on top to finish.
