Goat Cheese-Stuffed Dates With Prosciutto

I once read a study that suggested that consuming dates daily in the last month of pregnancy could shorten labor. I was willing to give it a try but found dates too sweet on their own, and I wanted to combine them with protein. The saltiness of goat cheese and prosciutto provided a great balance, and I found that I really enjoy dates prepared this way.

  1. Preheat the oven to 400°F.
  2. Thinly slice the green onions and mash them with the goat cheese to combine. Carefully stuff a small amount of the cheese mixture into each date. Cut the prosciutto slices in half and wrap one half tightly around each date. Bake for 10 minutes, or until the prosciutto is crispy. Remove, let cool, then serve.
