New York’s Famous Honey-Roasted Nuts, At Home

Though nothing will be identical to the bag of warm, sweet nuts you’ll get from a Nuts4Nuts cart, you can make a version of these honey-roasted nuts at home. Honey powder is available for purchase online or in certain specialty grocery stores, but you can easily just omit it, as it doesn’t affect the final flavor too much. For spicy nuts, add cayenne along with the salt.

Directions

  1. Combine nuts, sugar, water, and honey powder, if using, in a large stainless-steel skillet. Cook over medium-high heat, stirring with a wooden spoon or heat-safe spatula, until sugar and honey powder have started to dissolve.
  2. Bring the mixture to a boil, stirring occasionally, about 2-3 minutes. Continue cooking until sugar mixture thickens, bubbles, and reduces. When the mixture begins to seize and crumble (this could take up to 10 minutes depending on your stove), continue to stir, scraping up any bits of nuts or sugar stuck to the bottom of the pan. Continue cooking and stirring until sugar mixture begins to melt again, 30 seconds to 1 minute. Continue to cook until the nuts are coated in the now golden-tinted sugar mixture, 2-3 minutes.
  3. Remove the pan from the heat and stir in salt and cayenne, if using. Spread nuts onto a parchment-paper-lined sheet pan in a single layer. Let cool for 10-15 minutes, then break up any larger clusters of nuts.
  4. Store nuts in an airtight container for up to 1 week.
